Putting Her Name on the Door

Some milestones feel flashy.
Others feel deeply right.
Today was the second kind.

 

We officially named Grace a Managing Partner of our St. Matthews Biscuit Belly location in Louisville, KY—and celebrated by putting her name on the door. She’s the first person in our company to receive this distinction, and if you know Grace, you know this was never a question of if, only when.

Grace has been with us since the very beginning of St. Matthews. She helped open the doors, weathered the early growing pains, and stepped into the General Manager role five years ago. Since then, she’s done what great leaders do best: built a team people want to be part of, created consistency where chaos could’ve lived, and quietly raised the bar day after day.

What makes Grace special isn’t just that she runs a strong store. It’s how she does it. When we told her we were making her a Managing Partner, her reaction was classic Grace. She brushed it off with a smile and said something along the lines of, “Managing is easy when you have great people.”

And honestly? Same, girl. Same. That mindset–that leadership isn’t about power or ego but about people–is exactly why this made sense. Grace doesn’t lead from above. She leads alongside. She notices. She listens. She develops others. And the result is a store culture that feels steady, supportive, and proud.

Putting her name on the door wasn’t about a title. It was about recognition. About saying: We see you. We trust you. We want you building this with us for the long haul.

At Biscuit Belly, we talk a lot about investing in people. Grace is what that looks like when it works. When someone grows with the brand, shapes it, protects it, and helps it become better than it was yesterday.

So, we celebrated her. Not with a flashy announcement, but with something lasting. A name on a door. A stake in what she’s helped build. And a reminder that the best growth stories aren’t overnight successes. They’re five years of showing up, doing the work, and caring deeply.

Congratulations, Grace. We couldn’t imagine St. Matthews, or Biscuit Belly, without you.

Q: What brought you to Biscuit Belly? 
A: “After working in the industry for 4 years, I decided it was time to move in a new direction. Seeing that Biscuit Belly was a locally owned and growing company, I knew I had to apply. I got the job and worked my way up to a management position.”

Q: What’s been your favorite thing about working at Biscuit Belly?
A: “My employees. They make work SO enjoyable it doesn’t even feel like work. Love your job, and you’ll never work a day in your life!”

Q: If you could recommend one thing on the menu to a guest, what would it be?
A: “I LOVE the Biscuit Bennie. The smoked Gouda mornay and brisket come together so well!”

Q: Do you have any “menu hacks” or “off-menu” items you or your team like to make? 
A: “I just really enjoy eating our corn dogs. They’re ‘slept on’ as the kids would say. They put the Jimmy Dean frozen ones to absolute shame.”

Q: What do you like to do when you aren’t slaying biscuit realness (aka, what do you like to do outside of work)?
A: “I just started taking Lagree classes at Sculpt6 here in Louisville, working out has always been a passion of mine, and this is helping with my stability and everyday life! When I’m not moving my body, I can be found at home crafting or reading with my pups.”

Q: What do you like to do when you aren’t slaying biscuit realness (aka, what do you like to do outside of work)?
A: “I just started taking Lagree classes at Sculpt6, working out has always been a passion of mine, and this is helping with my stability and everyday life! When I’m not moving my body, I can be found at home crafting or reading with my pups.”

Q: And because I know you’re a reader…what’s your favorite book?
A: “Favorite book? That’s too hard. For a fantasy series, I would say the Crescent City Series by Sarah J. Maas. I loved the mix of fantasy and modern-day life. My favorite thriller is probably Jar of Hearts by Jennifer Hillier. This was a tough thriller to read but I really enjoyed her story telling! Really made me hate the villain 😭”
